Recipe: Super Chewy Low Carb Brownie Bites

[bigletter]This idea is perfect for when you’re having friends over for afternoon tea, a party or a sleepover. If you’ve prepared brownies using my chewy brownie recipe, you’ve already done about 60 percent of the work. But this part is the most fun and if you have little ones, it will entertain them as they help you roll the dough. The portion creates about 12-15 brownie bites. They each have about 5-7 grams of carbs and are made with avocado, cream cheese, cocoa powder and some vegan protein powder.[/bigletter]

Once you pull the brownie out of the refrigerator, you cut it up into squares. I usually do 4-5 lines horizontally and vertically. Then with a spatula begin breaking off piece by piece while stacking or placing the brownies onto a plate. I usually divide those pieces in half as well…therefore each piece is about 3 inches long and 1 inch wide. Then roll each piece into a ball and place it on a pan a few centimeters away from each other.

Once they are all rolled,  you can begin dipping. Options are endless:

  • Chopped pistachio
  • Peanut pieces
  • Shredded coconut
  • Cacao powder
  • PB2 (peanut butter powder.)

If you like nut butter inside, flatten it into a mini pancake on your hand, then add half a teaspoon of peanut butter or almond butter in the middle and then close it leaving the nut butter inside, while rolling the ball once again. You can then either roll the balls in the nuts and shredded ingredients, or you can sprinkle powders on top such as the ones I did with cocoa powder or the PB2.

The heat of your hands might have softened the brownie bites, so pop them in the fridge for another half hour to ensure they harden a bit. The, once you’re ready to serve on the biscuit tray, bring them out and enjoy with some coffee or tea.
